In November 2001, I visited Ruth and Dennis in Kempton Park.

Ruth baked some delicious treats and kindly shared the recipes:

Ruth's Sweet Rusks

Cream together:

bullet220gr sugar
bullet120gr butter
bulletgrated lemon peel

Add:

bullet4 eggs, one at a time
bullet500gr flour and 4tsp baking powder

and knead lightly.

Form into 2 sausages, bake at 180º C for approx 55 minutes.

Slice and dry in a cool oven (50-100deg)

Ruth's Shortbread

350gr flour

125gr caster sugar

bullet

310gr butter

bullet

2tbs cornflour

Cream butter and sugar

Mix in flours and bake at 300ºF or 160ºC till light brown (about 20-25 min.)

Ruth's Scones in Food Processor

2 cups plain flour

bullet

4 teasp baking powder

bullet

125gr margarine

bullet

1/2 cup milk with 1 egg beaten in

Whizz flour and marg, add liquid, mix to stiff dough. Pat to about 1 inch thick on floured plank, cut into squares. bake at 200ºC for 8-10 mins.

Ruth's Large Chiffon Cake

2cups flour

3tsp Baking Powder

bullet

1.5cups caster sugar

bullet

1tsp salt

bullet

half cup oil

bullet

3/4cup orange juice

bullet

5 egg yolks

bullet

7 egg wgites

bullet

2tsp orange rind

bullet

half tsp cream of tartar

Sift together flour, sugar, salt and BP.

Add oil, yolks, o.j. and rind. Mix well with wooden spoon.

Beat whites till stiff and dry. Fold yellow mixture into whites and place in large tube tin.

Bake at 350ºF (180ºC) for 50 minutes, then another ten minutes at 375ºF or 190ºC.

Remove from tin when cooled.
